Chicken Majboos/ Arabic Biriyani

INGREDIENTS

For Chicken Marination

  • Chicken – 1kg
  • Yogurt – 1/3 cup
  • Ginger garlic paste – 1 tbsp
  • Powdered nut mug – 1 tsp
  • Dry lemon powder – 1 tsp
  • Salt as required
  • Red chilly powder – 1/2 tbsp
  • Turmeric powder – 1/2 tbsp
  • Garam masala – 1 tsp
  • Pepper powder – 1/2 tsp
  • Cooking oil – 2 tbsp

Ingredients for Rice

  • Rice long basmati or sella rice – 1.5 cup
  • Chopped onion big -1 .5 cup
  • Chopped tomato – 2 cup
  • Cardomam 4
  • Cloves 4
  • Star anise 2
  • Cinnamon sticks 2 to 3
  • Bay leaves 4 – 5
  • Cumin seeds 1 tsp
  • Pepper corns 1 tsp
  • Powdered nut mug – 1 tsp + ¼ tsp
  • Dry lemon powder – 1 tsp + ¼ tsp
  • Dry lemon – 1
  • Oil – ¼ cup
  • Salt as required
  • Red chilly powder -1 tsp
  • Turmeric powder – ½ tsp
  • Garam masala – 3/4 tsp
  • Arabic masala powder – 1 tbsp

METHOD

CHICKEN MARINATION

  1. In a bowl, add the ingredients under marination and mix well and marinate for about 30 to 60 minutes

 

MAJBOOS RICE

  1. Heat oil in a heavy bottomed vessel and add all the whole spices: cardamom, cinnamon sticks, cloves, star anise, bay leaves, cumin seeds, Dry lemon and pepper corns. Sauté till the raw smell goes.

   2.  Add the chopped onions and sauté till it turns translucent.

   3.  Now add the chopped tomatoes and sauté it.

   4.  Add the required salt and cover and cook till it turns mushy.

   5.  Add the red chili powder, turmeric powder and garam masala and sauté till the raw smell leaves.

   6. Now add the marinated chicken to it and mix well.

   7.  Add a tbsp of Arabian masala and mix well.

   8.  Cover and cook.

   9.  Now add 3 cups of water and let the chicken get cooked.

   10.  Separate the cooked chicken from the masala and keep aside.

   11.  Add 3 cups of hot water into the masala gravy.

   12.  Now add 3 cups of rice to it. (washed and drained rice)

   13.  Mix it proper but be careful not to break the rice.

   14. Cover and cook until the rice absorb all water.

   15. After the rice is cooked, sprinkle ¼ tsp nutmeg and dry lemon powder.

   16.  Cover the pot with lid and lock the steam.

   17.  Meanwhile heat oil in a pan and shallow fry the cooked chicken pieces golden brown.

   18.  Place the fried chicken on top of the rice bowl and serve it.

   19. Our mouth drooling chicken majboos is ready and enjoy it with your loved ones.
